Tomato Basil Chicken Milanese – Framed Cooks

This easy recipe for tomato basil Milanese swaps out the normal veal for tender hen and uses recent summer time cherry tomatoes and basil for a flavorful topping. A perfect delicious summertime supper!

I really like this fast and straightforward recipe for hen Milanese, first because of the fast and straightforward half, and second because it is one in every of my go-to summer time hen recipes that doesn’t contain the grill or making a salad.

Not that there’s something improper with hen salad or grilled hen, mind you!  However typically through the summer time I get saladed-out, and typically I don’t have the guts to ship the Southern husband out into the sweltering warmth to stand over the sweltering grill.

So this recipe that requires much less that 8 minutes on the range and consists of candy summer time tomatoes and cheery summer time basil and delectable Parmesan cheese is the reply!

So what does Milanese mean, anyway?

Milanese sounds all elegant and probably intimidating, but I am here to inform you that’s is nothing greater than a light-weight golden breadcrumb coating on a bit of skinny pounded hen.  Veal was the primary element in this dish, but I’ve seen increasingly more versions of hen Milanese popping up on menus.

Chicken isn’t solely inexpensive than veal, however I find that it is a lot easier to prepare dinner up as properly.   Pounded veal can dry out shortly when you don’t watch it like a hawk, however pounded hen pretty reliably cooks up to tender deliciousness.

Right here’s how you make tomato basil hen Milanese!

Like I stated, Milanese is fancy for a crispy bread coating, and you’ll begin by pounding some hen breasts until they are about 1/Four inch thick.  If the pounding makes them super huge, simply minimize them into whatever affordable sized items look proper to you.

Subsequent you’ll season them up with a bit of salt and pepper, after which dunk them first into some crushed egg, then into some panko breadcrumbs, then into the grated Parmesan cheese.  I wish to line up three soup plates with these three dunking elements proper next to my stovetop so when the final piece of hen is coated they will go proper into the frying pan.

This easy recipe for tomato basil Milanese swaps out the normal veal for tender hen and uses recent summer time cherry tomatoes and basil for a flavorful topping!Click on to TweetCook them up until they are golden and crispy, about 3-Four minutes per aspect, and while they’re cooking you’ll be able to whip up the delectable topping that units this hen Milanese aside in my e-book…halved cherry tomatoes tossed with recent basil, a splash of olive oil and a drizzle of balsamic vinegar.

When the hen is prepared, simply divide it among plates, spoon the tomato topping over the hen and scatter on a bit of extra Parmesan cheese for good measure.

Now doesn’t that just appear to be summer time on a plate?  A warm weather winner, winner hen dinner!  What are your summertime hen faves?  Tell me in the feedback!
